Meat Free Chilli Recipe

As you may or may not know I'm trying to lose weight. One of the things I have started to do is to eat meat free one day a week. This week I've decided to to adapt my own Chilli recipe and replaced the beef mince with quorn mince and removed some other high calorie ingredients. I cook this mainly in the slow cooker just because it makes it easier, this recipe will make 6 portions and will be around 350 calories per portion.

The Ingredients

1 onion
1 small bag of mushrooms
1 pepper
2 garlic cloves
300g Quorn mince
400g can of chopped tomatos
400g can of baked beans
400g can of kidney beans
400g can of cannellini beans
2 chillies (as hot as you like)
2 tbsp chilli powder
1 tsp ground cumin
1 tsp ground coriander
shake of mushroom ketchup
salt
freshly ground black pepper
bunch of coriander roughly chopped



The Method

Put the chopped tomato, baked beans and quorn straight in the slow cooker. Drain the kidney beans and cannellini beans and add them to the slow cooker as well. Chop the mushrooms, onion, pepper and chilli and crush the garlic.


Spray a frying pan with 1 calorie cooking spray and put on a medium heat. Add the onion and cook for a few minutes until soft and translucent. Add the garlic and fry for about 2 minutes, then add the peppers and chilli and fry for another few minutes.


Once everything has softened add them along with the mushrooms to the slow cooker and mix together then add the spices and mix again. 


Put the lid on and and leave it for as long as you like. As there is no meat all you need to wait for is the flavours to infuse to the point you like and add salt and black pepper to taste.


Serve in a bowl and sprinkle on some chopped coriander for garnish. I've served it here with some home made guacamole, if you want you can also have it with rice (or cauliflower rice).
