Monday Munchies: Eggs Rickelton

I may be wrong but I think I've invented a new breakfast. They say necessity is the mother of invention and that is how I came up with this. One of my favourite breakfasts is Eggs Benedict but I was missing a few key ingredients so had to make a few substitutions and I have christened this one Eggs Rickelton.

I didn't have any muffins so used a crumpet instead, I didn't have any ham so used black pudding in its place this is then topped with a poached egg and hollandaise sauce.

  1. I normally say Steve that looks lush to your foodie posts, but I can't think of anything worse than hollandaise sauce, egg and black pudding!! We all have different tastes though and I'm loving the grey plate!
