Monday Munchies: Pigs in Blankets Mac and Cheese


It is never too early to start thinking about Christmas snacks. I've already had a few mince pies and I'm getting ideas for what to have leading up to the big day. This week I rustled up this little festive corker, this will serve four and maybe my new favourite Yuletide treat.

Pigs in Blankets Mac and Cheese Recipe by Big Stevie Cool


Ingredients:

350g Macaroni
250g Mature Cheddar, grated
500ml Whole Milk
50g Parmesan, grated
2 tbsp butter
1 Clove of Garlic, finely chopped
3 tbsp Plain Flour
1 tsp English Mustard Powder
12 Pigs in Blankets
150g Smoked Streaky Bacon

Method:

1. Cook the pigs in blankets as the instructions direct and then set aside.

2. Boil the macaroni for a few minutes less than you normally would.

3. In a saucepan melt the butter and add the garlic and mustard powder. Cook for 1 minute. Then stir in the flour and cook for another minute.

4. Gradually add the milk and simmer for around 5 minutes. Whisk the whole time until the sauce has thickened but is lump free.

5. Take off the heat and add the Cheddar and half the Parmesan and stir until it starts to melt. Have a little taste and add any seasoning you think is needed.

6. Stir in the macaroni pasta and Pigs in Blankets (you can cut them in half if preferred but I like them whole) and pour into an oven proof dish. Sprinkle over the remaining Parmesan and bake in the oven for 20 minutes at 200Âșc until it's golden and crispy.

7. Meanwhile, fry the streaky bacon and then leave to cool. Once cool and crispy bash the rashers with a pestle and mortar until it's a crumb consistency.

8. Serve the finished Mac and Cheese in a bowl and sprinkle the bacon crumbs on top.

Perfect with some rustic bread or a baguette, Merry Bloody Christmas!
