Monday Munchies: Blueberry American Pancakes with Streaky Bacon and Golden Syrup

Pancakes, yum! Blueberries, yum! Golden Syrup, yum! Bacon, YUM!!!

Hands up who loves pancakes? Also, whoever thought of having bacon with them is a genius. This is a bit of an unhealthy breakfast but so worth it. To make this recipe you will need the following:


200g of self-raising flour
1tsp baking powder
1 egg
1 knob of butter
300ml milk
streaky bacon
golden syrup

The Method

These are so easy to make, beat the egg and mix with the milk, add to the flour and baking powder and whisk into a batter. Next melt the butter and fold this into the batter mix along with half the blueberries.

Heat two wide based pans on a medium/high heat with some oil, in one fry the streaky bacon until crispy.

Use a ladle full of batter to make each pancake and cook three at a time in the 2nd pan, cook for 3-4 minutes depending on how much colour you want.

To assemble your dish just stack the pancakes with bacon and golden syrup on each layer and then scatter some blueberries around the plate.

  1. These look delicious! I think I'll give them a go (without bacon as I don't eat meat) as they don't look too challenging to make and even I might manage them!
