Monday Munchies: Vegetarian Shawarma Salad


I've been looking for bit of a healthy dinner to make at home but not just another boring salad. We sometimes get meals from Gousto and this is inspired by one we had recently. I've made a few changes to the original recipe to give it my own twist.

This recipe will serve 2 and you will need the following:

1 can of Chickpeas
150g fat-free Greek yoghurt
1 tbsp of Ras al Hanout
1 tsp Cayenne Pepper
1 tsp Dried Chilli Flakes
1 Carrot
1 Tomato
1 tsp mint sauce
50g Baby Leaf Salad
125g Red Cabbage
125g White Cabbage
30ml Red Wine Vinegar
2 Pittas


Method:

Chop the cabbage into strips and put it into a bowl with the vinegar and a good pinch of salt and leave it to pickle for a few minutes.

Drain the chickpeas and mix these with the Ras al Hanout and the chilliflakes and then bake in the oven at around 220ºC(200ºC fan) for 15 mins.

Chop the pittas into around 2cm pieces, spread it out on a baking tray and drizzle with olive oil and sprinkle on the cayenne pepper. Give it all a mix and bake for 10 mins (or until brown and crispy)

Chop the tomato and grate the carrot and combine these with the salad leaves. When the pittas are done add these and the cabbage and toss it until it's all mixed then season with salt and pepper.

Put the salad on a plate, mix the mint sauce with the yoghurt and add this on top then add the baked chickpeas.
